Baked Eggs in Avocado

  1. Preheat oven to 450 degrees. Split avocado in half and take pit out. Scoop out a little of the avocado flesh from side to side to allow for more egg. Crack each egg in a separate bowl and scoop out yolk and place in hole in one of the avocado halves. Fill in any extra space with egg white. Repeat for second half.
  2. Place avocado halves in foil lined baking dish. Add toppings of your choice including cheese, onions, bacon, herbs. Bake in 450 degree oven for 15-20 minutes.
  3. The longer you cook the avocados the harder the eggs will be. I liked them cooked a little less so the yolks were still a little bit runny. You can play with the time to get the perfect egg for you.
