Saucy Meatloaf
An old stand by dinner made just a little “saucier” with an extra ingredient makes this meatloaf recipe a winner any way it is served.

  1. 1. In a large bowl combine eggs, milk, oats and soup mix. Mix well and add meat. 2. Mix very thoroughly and then add 1 can of Ro-tel tomatoes. Mix with hands until thoroughly combined. 3. Shape into a loaf shape and place in lightly greased loaf pan. 4. Combine topping ingredients in a small bowl and brush liberally on top of the loaf. 5. Bake at 350 degrees for 1 hour. Remove from oven and let rest for 10 minutes before cutting.
  2. This recipe can also be adapted for the crock pot. Simply follow the mixing instructions and place meat in a crock pot making sure the mixture does not touch the sides of the crock pot. Cook on low for 6 hours or on high for 3 hours. To make removal from the crock pot easier simply spray cooking spray lightly in the crock pot before placing the mixture inside. Lay a wide rectangle of aluminum foil in the crock pot making sure it hangs over the sides so that you can just lift the meatloaf right out when it is done cooking.
