1. In a large bowl combine eggs, milk, oats and soup mix. Mix well and add meat.
2. Mix very thoroughly and then add 1 can of Ro-tel tomatoes. Mix with hands until thoroughly combined.
3. Shape into a loaf shape and place in lightly greased loaf pan.
4. Combine topping ingredients in a small bowl and brush liberally on top of the loaf.
5. Bake at 350 degrees for 1 hour. Remove from oven and let rest for 10 minutes before cutting.
