  1. Place eggs, sugar, salt, juice and zest in a medium saucepan. Whisk ingredients until smooth.
  2. Place over medium heat, store constantly with wooden spoon until thickened – 5 -6 minutes. Turn heat to low, add butter and still until smooth.
  3. Remove from heat, pour into jars and refrigerate. Great on toast and scones.
