Ingredients

large
eggs
3/4
cup
sugar
1/2
cup
fresh lime or lemon juice
zest of one lime or lemon

tbsp
butter
pinch
salt
Instructions
Place eggs, sugar, salt, juice and zest in a medium saucepan. Whisk ingredients until smooth.
Place over medium heat, store constantly with wooden spoon until thickened – 5 -6 minutes. Turn heat to low, add butter and still until smooth.
Remove from heat, pour into jars and refrigerate. Great on toast and scones.
