Rotisserie Chicken Tortilla Soup

The weather lately has had me wanting a nice hot bowl of soup and I have been experimenting with a couple new recipes. I tweaked a chicken tortilla soup recipe and found out that we loved it. So much flavor and such a great meal to have on a chilly day. It’s easy and simple to make if you use a rotisserie chicken.

Ingredients
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 1 tablespoon olive oil
  • 2 teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 28 ounce can crushed tomatoes
  • 1 10.5 ounce can chicken broth
  • 1 1/4 cups water
  • 1 can whole kernel corn drained
  • 1 can white hominy drained
  • 1 4 ounce can green chili peppers chopped
  • 1 15 ounce can black beans rinsed and drained
  • 1/4 cup cilantro chopped
  • 2 cups rotisserie chicken shredded
  • crushed tortilla chips
  • sliced avocado
  • shredded Monterey Jack Cheese
  • chopped green onion
Servings: servings
Instructions
  1. Sauté the onion and garlic in olive oil in small pan until translucent.
  2. In large stockpot or crock pot put all ingredients including the onions and garlic. Bring to a boil and reduce heat and simmer for 40 minutes or so to allow flavors to blend. If using crock pot place all ingredients in crock pot and set on low for 4-6 hours.
  3. Serve steaming hot with your choice of toppings: crushed tortilla chips, avocado, cheese, onion and sour cream. I also saved some fresh cilantro for a topping. Cornbread serves as a perfect side as well. If you want to spice it up just add a little bit of hot sauce.

    Oh, this looks yummy! Thank you so much for sharing this! Believe it or not, I have never used a rotisserie chicken before. (I’ve always been a little intimidated for whatever reason.) This recipe looks easy and manageable. I saved it to my Pinterest account. Thank you so much!

      Hope you make this and love it. You don’t have to use a rotisserie chicken but it makes it easier if you have one that you have leftovers from. I usually serve it for dinner and then pick the carcass for another couple of meals. This works great for soups and casseroles and tacos, etc.
