Another recipe taken from Grandma Bonnie’s notebook and this one is a healthy one to add to a breakfast menu. Who doesn’t love a muffin and these are low in sugar and high on taste. I added a few little extras to spice it up and the results are delicious.
Why not whip up a batch for this weekend? Simple and fast these muffins are the perfect answer to breakfast.
Ingredients
- 1 1/4 cups flour sifted
- 3 tsps baking powder
- 1/2 tsp salt
- 1/3 cup sugar
- 1 1/2 cup 40% bran flakes
- 1 egg
- 1 cup milk ( I used almond milk)
- 1/4 cup vegetable oil
- 1 tsp cinnamon optional
- 1/2 cup chopped pecans optional
Servings: muffins
Instructions
- Sift together flour, baking powder, optional cinnamon, salt and sugar. Set aside.
- Place bran flakes, milk, egg and oil in a bowl and beat well.
- Add sifted dry ingredients to bran mixture mixing just enough to combine. Add chopped pecans if desired. Put in greased muffin tin.
- Bake in moderately hot over at 375 degrees for 25 minutes. Best served hot out of the oven.
