I decided to spend the next few posts sharing some recipes from the tea party as several people asked for various recipes of things that I pictured that we had to share. Let’s start off with the infamous Lemon Curd recipe. I actually found this recipe in a tea group that I belonged to and it was actually a Lime Curd recipe which was very good as well. Just change out the lime for lemon (whatever you have on hand) and it is an easy way to make a tasty spread for toast or scones.
Ingredients
- 3 large eggs
- 3/4 cup sugar
- 1/2 cup fresh lime or lemon juice
- zest of one lime or lemon
- 4 tbsp butter
- pinch salt
Servings: cups
Instructions
- Place eggs, sugar, salt, juice and zest in a medium saucepan. Whisk ingredients until smooth.
- Place over medium heat, store constantly with wooden spoon until thickened - 5 -6 minutes. Turn heat to low, add butter and still until smooth.
- Remove from heat, pour into jars and refrigerate. Great on toast and scones.
