Pumpkin Cookies
Mix all together in a bowl: 2 cups brown sugar, 1 cup vegetable oil, 1 regular can pumpkin, 2 eggs, 1 1/2 cup unbleached flour, 1 1/2 cup whole wheat flour, 1 tsp each salt, baking powder, baking soda and vanilla, 1 1/2 TBS cinnamon, 1 TBS ginger, 1 TBS cloves
Use a scoop to place on greased baking sheets. Bake at 350 degrees for 10 – 12 minutes. Test cookies by pressing in slightly in middle. They should spring back. Frost with prepared frosting or make the following:
Cream Cheese Icing: Blend 1 8 oz pack cream cheese, 1 stick butter, 1 tsp vanilla and 1 pound powdered sugar. Dollop each cookie.* I used all regular flour and they turned out great. Enjoy!!

Perfect tea pot for the Thanksgiving table!!! I was all done on all things pumpkin for the year but now I have to try these cookies… they look too good to resist! 🙂

My family and I love pumpkin…must make these temptations! I like the autumn teapot…glad to see I am not the only one that still has fall decor out and not Christmas!
Christmas will not come to my house for a while….got too much catching up to do and we don’t decorate too much since we are never home over Christmas! These cookies are great year round—the recipe actually is from Bear’s Mill in Greenville!!!
