This beauty features a “fallish” theme and makes a fine cuppa of whatever you want! Pull up a chair and join me in a cup of your favorite brew along with some delightful pumpkin spice cookies—recipe below! They are delightful!
Mix all together in a bowl: 2 cups brown sugar, 1 cup vegetable oil, 1 regular can pumpkin, 2 eggs, 1 1/2 cup unbleached flour, 1 1/2 cup whole wheat flour, 1 tsp each salt, baking powder, baking soda and vanilla, 1 1/2 TBS cinnamon, 1 TBS ginger, 1 TBS cloves
Use a scoop to place on greased baking sheets. Bake at 350 degrees for 10 – 12 minutes. Test cookies by pressing in slightly in middle. They should spring back. Frost with prepared frosting or make the following:
Cream Cheese Icing: Blend 1 8 oz pack cream cheese, 1 stick butter, 1 tsp vanilla and 1 pound powdered sugar. Dollop each cookie.
* I used all regular flour and they turned out great. Enjoy!!
