Baked Eggs in Avocado – A Healthy Breakfast Option

I am always looking for new recipes and someone posted a link to a baked avocado recipe a couple weeks ago and I had to tweak it and try it for myself.  Of course I cannot for the life of me remember who posted it but if you are reading this and it was you thank you so much.  I have made my version twice already and am ready to share a quick and easy recipe here with you today.

Ingredients
  • 1 whole avocado cut in half, pitted
  • 2 small eggs
  • 1/3 cup cheese I have used cheddar and a horseradish cheddar.
  • 2 slices bacon cooked and crumbled
  • 1 tsp fresh oregano minced
  • 1 green onion chopped finely
  • 1/4 tsp salt/pepper/garlic mix

Instructions
  1. Preheat oven to 450 degrees. Split avocado in half and take pit out. Scoop out a little of the avocado flesh from side to side to allow for more egg. Crack each egg in a separate bowl and scoop out yolk and place in hole in one of the avocado halves. Fill in any extra space with egg white. Repeat for second half.
  2. Place avocado halves in foil lined baking dish. Add toppings of your choice including cheese, onions, bacon, herbs. Bake in 450 degree oven for 15-20 minutes.
  3. The longer you cook the avocados the harder the eggs will be. I liked them cooked a little less so the yolks were still a little bit runny. You can play with the time to get the perfect egg for you.
Recipe Notes

I love simple recipes using things I have on hand and this is one of those that is easy to make, tasty and looks pretty as well.  Adding different toppings can make it a new recipe each time you make it.  Enjoy.

    Oh, I make something similar – a poached egg in an avocado half with roasted cherry tomatoes. Yum! Love avocados!

      Avocados are a pretty versatile thing and I do love a good one. This recipe is one that can obviously be changed up –do you bake yours or cook it in the microwave?

    I may have shared this. Or at least I saw this recipe somewhere recently. I’m so glad you tried it. I plan to make it as soon as we have an oven! Seems like you could add a variety of ingredients!
