You read correctly! Today is National Dry Bean Day and what better way to celebrate the day than to cook up some dry beans. One of my favorite ways to use up leftover Christmas ham is to make a crock pot ham and bean meal. It is super easy and never disappoints. Pair it with a pan of cornbread, a salad and your dinner is made. Crock pot/ slow cooker meals are the best way to cook some days and this recipe has so few ingredients but ends up being so yummy it is almost sinful.
Slow Cooker Ham and Beans
1 pound package dried northern beans
ham bone, ham hocks, shanks or good chunks of ham
2 tsp onion powder
6 cups water
salt and pepper to taste
Rince beans. Add beans, onions powder, salt, pepper and ham to crockpot. Add water. Cover and cook on low 8 hours or high for 4 hours. Remove ham bone, pull off meat, add to pot and mix. I sometimes add egg rivels to make it even better. Sure to please with so little work.
Oh and while your ham and beans cook you can also celebrate Take Down Your Christmas Tree Day because it is also celebrated today. Guess what we will be doing later today?

Our tree is coming down today as well. It is always sad for me as it is so warm and cheery sitting in the corner. Now I have to wait another 11 months. Sigh.

This sounds easy, especially making the beans in a crockpot. I’ve done baked beans in the crockpot, but cook them first on the stove until soft.
I just made this last week with small lima beans, only thing I did different was I cooked them on the stove. Next time I will try them in the crockpot!
What is egg rivals?
Just a flour and egg mixture that you dribble in the hot mixture . Like little dumplings kind of.
In a separate bowl, scramble eggs with a fork. Add eggs to flour/salt mixture and “rivel ’em up” (just stir around with a fork until mixture becomes crumbly). Drop by small handfuls into boiling broth. Boil for 15 minutes and enjoy!
