Super easy and delicious - this slow cooker meal is sure to be a hit on St. Patrick's Day or any day of the year. Left overs make great reuben sandwiches.

Ingredients
- 1 cup baby carrots
- 10 small red potatoes Cut into quarters
- 1 onion peeled and cut into chunks
- 4 cups water
- 1 4 pound corned beef brisket with spice packet
- 6 ounces beer
- 1/2 head cabbage coarsely chopped

Instructions
- Place carrots, potatoes and onion in the the bottom of a slow cooker, pour in the water and place meat on top of the veggies. Pour the beer over the brisket and then sprinkle spice packet over all, Cover and set cooker on high .
- Cook brisket for 7-8 hours (depending on your slow cooker). An hour before you are ready to serve, stir in the cabbage and cook one more hour.

Have you never had a Reuben? Yummy. Wikipedia says: Corned beef, or salt beef in some Commonwealth countries, is salt-cured brisket of beef.[1] The term comes from the treatment of the meat with large-grained rock salt, also called “corns” of salt. Sometimes, sugar and spices are added to corned beef recipes. Corned beef is featured as an ingredient in many cuisines.
Great easy recipe. We have been using it in our family for ever or at least that’s the way it seems. And a Rueben sandwich. The first one I had was in my grandmothers house. She was married to a chew and apparently this was a staple.
