Brussels Sprouts Apple Salad

I had a plethora of brussels sprouts in my fridge last week and decided I needed to find another way to use them other than roasting or steaming them. I have always loved them and now it seems they are the veggie of the year. Who knew I was a trend setter?

I googled recipes using them and as I have bought packaged salads with sliced / shredded brussels sprouts in them before I was looking for a recipe that I could make using that idea. I found lots of options and adapted one using a few different ingredients in the dressing to make a really tasty salad. I hope you agree.

A tasty and slightly biting salad that is the perfect side to any meal.

Ingredients
  • 3 cups brussels sprouts sliced very thinly 2
  • 2 apples, your choice of variety halved, cored and thinly sliced
  • 2 tbsp extra virgin olive oil
  • 1 TBSP lemon juice
  • 2 TBSP honey
  • 1 TBSP coarse ground mustard
  • salt and pepper to taste
Servings: servings
Instructions
  1. Place brussels sprouts and apples in a medium sized bowl.
  2. Whisk remaining ingredients together and pour over sprouts and apples.
  3. Refrigerate for a few hours to let flavors blend if possible before serving.
