Everything But the Kitchen Sink Soup

You may be tempted to put the kitchen sink in this hearty soup but trust me - it does not need it. This is a hearty beefy soup that can cook all day in the crock pot and be ready for dinner. Serve with a loaf of crusty bread, green salad and you have dinner in a jiffy.

Ingredients
  • 1 can black beans
  • 1 can pinto beans
  • 1 can kidney beans
  • 1 can corn
  • 1 can hominy
  • 1 can green beans
  • 1 can Rotel
  • 1 can diced tomatoes
  • 1 onion diced Can use dehydrated onion
  • 1 package prepared frozen meatballs ( I used two for my meat loving husband)
  • 1 package ranch dressing mix
  • 1 package taco seasoning packet Can use homemade seasoning mix
  • 8 ounces sturdy pasta like fusilli or rotini
  • 2 packets beef flavor cubes/flavor boost Can also use 1 can beef broth
Servings: servings
Instructions
  1. Cook onion in oil until translucent .
  2. Dump onions and frozen meatballs in crock pot.
  3. Add remaining ingredients EXCEPT pasta in crock pot. Stir and allow to cook on low for 4-5 hours.
  4. Cook pasta according to package directions. Set aside and add desired amount of pasta to each bowl when serving to prevent pasta from getting soggy.
  5. Toppings to enhance: cheese, sour cream, shredded cheddar cheese, crackers, corn chips , diced green onions, avocados.

    Tis the season of soups and stews. We just finished beef stew last night and today I’m making a soup and, maybe, homemade bread. I could eat soup every day. This sounds like a hearty and easy recipe.
