Slightly Savory Saturday

Don’t you just love a good salad?  I know I do and I found a recipe by The Pioneer Woman –Ree Drummond that I tweaked a bit to suit my tastes.  Easy and tasty with a bit of a kick–this Kale Citrus Salad is a great addition to any meal as a side or as a meal in itself.

Kale Citrus Salad

Ingredients:

  • 1 bunch kale, leaves torn off stalks and cut into small pieces
  • 1 whole jalapeño, seeds taken out and sliced very thinly
  • 2 tangerines or clementines or orange—I used tangerines, peeled and cut into chunks
  • 4 ounces goat cheese ( I used mozzarella on my own bowl since I am not a goat cheese lover)
  • 1/4 cup orange juice
  • 2 TBSP olive oil
  • 1 clove garlic, pressed or grated
  • 1 TBSP sugar
  • salt and pepper to taste
  • 1 TPSP or more sour cream or plain greek yogurt—I used yogurt

Take the cut kale and place in large serving bowl.  To make the dressing combine the orange juice, olive oil, garlic, sugar, salt and pepper in a small mason jar. Shake until combined, add sour cream/yogurt and shake until creamy.

Toss the kale in half of the dressing, add jalapeño slices and citrus pieces.  Toss until combined and add more dressing if needed.

Right before serving add the crumbled goat cheese and serve.  Delicious.

    Looks good! I have never eaten kale…. growing up, Mom had a little vegetable garden, and cabbage was our leafy green veggie!

      A lot of folks have not tried kale and it surprises me but I guess it shouldn’t. It is a really sturdy and substantial “green” and holds up really well in a salad.

      Kale is pretty yummy and it is so pretty in a salad! 🙂 And that is how I judge food—by how pretty it is. Doesn’t everybody? 🙂

      It was really good–makes a huge amount and it was fine the next day as well. I didm’t load it with a lot of dressing. The jalapeños give it a nice bite that is a different taste sensation.

      It really was yummy and the kale stands up so well to the dressing. The peppers give it a punch—I didn’t even eat any of them but their flavor was all the way through the salad. That Pioneer Woman knows her stuff!

    Love kale! Did you massage it at all to make it a bit more tender? Typically if I do a kale salad I either need to make it a chopped salad, massage the leaves a bit, or let it stand in the dressing for a while to soften it up. I find that kale can sometimes be extremely fibrous! Enjoy 🙂

      That is a great tip but my husband might start worrying about me if I tell him I am massaging my kale. 🙂 Actually this bunch was really tender compared to most I have gotten so it was really crisp but not too woody if that makes sense. And the dressing was light and did not weigh it down a bit . The pieces were chopped fairly small so I think that was what helped. Great tip, thanks!!

    I’m not a huge fan of kale, but I bet this would also be great with spinach. What do you think? The dressing sounds amazing!

      Spinach would work, too. The kale is probably sturdier but the spinach would be a lighter texture. Yum.
