A Brie Prosciutto Delight

Pinterest is a great place to find all kinds of great ideas, recipes, crafts, and just about anything you might want to know more about. I used to be much more active on Pinterest than I have been recently but I have been intrigued by one of the latest easy meal ideas using tortillas. The most popular one I have seen is making a little pizza from a tortilla. This is a link to one of the blogs that showed how to do this particular one. Just click here to go directly to that link.

My mind got to thinking about how many different things you could do this way and then I found a recipe using some of my all time favorites. Leave it to TikTok users to do a great tutorial for me. Click here to see that video.

Basically for this one all you need is a tortilla, brie, arugula, apple, prosciutto, and a dab of fig jam. All of these are in my favorites list and I have always been a fan of brie and apple sandwiches. It is super easy to make.

Gather ingredients and prepare by slicing wedges of cheese, apple wedges and cutting a slit halfway up the tortilla.

Pile on cheese on bottom right side to have it closest to the heat for easy melting. Argula, Apple slices and prosciutto are added next with a little smear of fig jam on top of the brie. Have I told you how much I love fig? We fell in love with fresh figs when we visited Croatia and I am contemplating buying a hardy fig tree for our yard. They are so good.

Fold the arugula section up over the apple and continue folding until tortilla is a cute little triangle package.

Cook on medium heat in a skillet with just a dab of oil starting with cheese side down. Flip when golden brown and cook on second side until brown and toasty. I used a pan lid to help melt the cheese and that worked like a dream. You can also do these on the grill but I am thinking the cheese would be super melty and you would have to keep an eye on it.

However you end up cooking it is a great lunch idea and one that I will do again. The flavors blend together and there is a nice crunch from the arugula and the apple slices. Yum.

Now I am thinking about a Nutella, strawberry and banana one…..
