I have given a lot of things away in the past couple of weeks but there was no way I was going to give away my last package of ground beef from Sky View Farms. No way. I had that and a couple of packages of Ramen that I had saved out from my food pantry donation and I had plans.
This is such an easy dinner to throw together and requires little prep time so it is a winner when time is short. Any kind of veggies can be used but you know my passion of avoiding cooked carrots so I went with a non carrot option. The result is filling and yummy. Perfect fix for a a summer night when there are better things to do than hang around a kitchen.
- 1 1/4 pounds ground beef
- 2 packages Oriental ramens
- 2 cups frozen vegetables
- 1/4 tsp ginger
- 2 TBSP green onion chopped
- Brown ground beef and drain. Season with one seasoning packet from ramen package and set seasoned ground beef aside.
- Put 2 cups of water, veggies, noodles (all broken up), ginger and optional season packet in pan. Boil, reduce heat and cover pan. Simmer for 3 minutes .
- Return beef to skillet and add onions and cook until warmed.
This recipe is great for a quick supper. You can use any variety of frozen veggies and it will always taste good. If you do not want as much seasoning just cut the amount in half and use half of a package for seasoning the ground beef and the other half for seasoning the noodles.

My boy loves his Ramen noodles, consumed at some Ramen restaurant in Boston. Apparently not at all like the Ramen noodles we can purchase at the store.
