Turkey Tetrazzini

The first recipe in my Recipes from Grandma Bonnie’s Notebook series happens to be one that used to be a family favorite.  The recipe actually came from my sister Paula who I suspect got it from a friend.  My grandma had it written in her notebook and gave Paula full credit for the recipe so that made me smile as well.

It is an easy casserole type dinner served best piping hot with a nice fresh green salad and crusty bread to accompany it.  It is a perfect way to use up some leftover turkey or chicken and dark or white meat are both perfectly fine in the recipe.  Different herbs and vegetables can be added to alter the taste to your liking but it is comfort food at its best. Ingredients
  • 8 ounces spaghetti broken in pieces (Whole wheat is great)
  • 1 can sliced mushrooms
  • 4 TBSP butter
  • 3 TBSP onion chopped
  • 1/2 cup celery chopped
  • 1/2 cup bell pepper chopped, optional
  • 1/8 tsp cayenne pepper
  • 1/4 tsp italian seasoning
  • 1 an cream of chicken soup
  • 1 can evaporated milk
  • 2 cups cooked turkey or chicken chopped into pieces
  • 1/2 cup Parmesan cheese grated
  • 1/2 cup cheddar cheese grated
Servings: servings
Instructions
  1. In salted water cook spaghetti until just tender. Drain and rinse with hot water.
  2. Drain mushrooms and save the liquid.
  3. Melt butter and sauté onion, celery and optional bell pepper. Add seasonings and mushroom liquid.
  4. Blend in soup and stir until smooth. Gradually add evaporated milk stirring constantly until smooth and thickened.
  5. In a 2 quart casserole mix spaghetti, mushrooms and turkey or chicken. Pour in sauce and mix. Top with cheeses.
  6. Bake at 350 degrees for about 30 minutes.
Recipe Notes

This is a great recipe to make ahead and refrigerate or freeze until ready for use.

If you do not have evaporated milk in the pantry (like me) it is very easy to make some by simmering 2 1/2 cups regular milk until it reduces to 1 cup.  Easy way to do a substitution and eliminate a trip to the store.

Fortunes – The Next Installment

It is no surprise that I love reading fortunes in fortune cookies.  We tend to eat at a lot of Chinese and Japanese restaurants and I can’t resist a good fortune every now and then.

Some are more amusing than others and honestly some make no sense whatsoever but they make me smile regardless.

Check out some of these fortunes that have come my way.

1. Ask not what your fortune cookie can do for you but what you can do for your fortune cookie. (I promptly ate it –that is what I could do for it.)

2. Your sparkle will never fade. (Must be that crown I keep wearing.)

3. You are talented with your hands.

4. Your love life will be happy and harmonious.

5. You will be called upon to help a friend in trouble. (Hope my cell phone is on.)

6. Give a hug to someone who needs one more than you.

7. Romance is about to blossom. (I was with Chris when I got this one…..)

8. No act of kindness, no matter how small, is ever wasted.

9. If you’ve got it, flaunt it. (Somehow this just does not seem like a fortune to me.)

10. A short stranger will soon enter your life with blessings to share. (I am keeping my eyes open for little people—so far–nothing. )

11. You will become a great philanthropist in your later years. (Probably my favorite one thus far!!!)

12. A smile is nearly always inspired by another smile.

13.There are lessons to be learned by listening to others.

14. Your many hidden talents will become obvious to those around you.

15. You are soon going to change your present line of work.

16. The philosophy of one center is the common sense of the next.

17. The courage will help others and soon will make you a leader.

    I saved this fortune that someone found in his cookie: “You display the wonderful traits of charm and courtesy.” “Charm” fit this person to a T, but not in a good way.

    I love #6 and #8. I have had a few that were very good. I had one on my fridge for a long time that said “Hard work will bring you good fortune” Once when I was having a Chinese meal with my dad and some of his buddies I opened my fortune cookie and read, “You will give all your money to your daughter.” (which is not what it said) Dad´s farmer pals thought that was very funny.
