Saucy Meatloaf on Slightly Savory Saturday

14 Comments/ 4460/ 2

I had a craving for meatloaf and for once I decided to actually write down the recipe for it instead of just throwing stuff in  willy nilly. This one turned out moist and delicious and everyone wanted seconds.  The option for cooking in a crock pot also makes it a winner for a hot summer day when you don’t want to heat up the kitchen with the oven.

Ingredients
Meatloaf
  • 2 eggs beaten
  • 1/2 cup milk (I used almond milk and it was perfect.)
  • 3/4 cup oatmeal (I used regular, not quick cooking.)
  • 1 envelope dry onion soup mix
  • 2 pounds lean ground beef
  • 1 can Ro-tel tomatoes (I used mild but use what suits your taste.)
Topping
  • 1/2 cup brown sugar
  • 1/2 cup ketchup
  • 1 tsp apple cider vinegar
Servings: servings
Instructions
  1. 1. In a large bowl combine eggs, milk, oats and soup mix. Mix well and add meat. 2. Mix very thoroughly and then add 1 can of Ro-tel tomatoes. Mix with hands until thoroughly combined. 3. Shape into a loaf shape and place in lightly greased loaf pan. 4. Combine topping ingredients in a small bowl and brush liberally on top of the loaf. 5. Bake at 350 degrees for 1 hour. Remove from oven and let rest for 10 minutes before cutting.
  2. This recipe can also be adapted for the crock pot. Simply follow the mixing instructions and place meat in a crock pot making sure the mixture does not touch the sides of the crock pot. Cook on low for 6 hours or on high for 3 hours. To make removal from the crock pot easier simply spray cooking spray lightly in the crock pot before placing the mixture inside. Lay a wide rectangle of aluminum foil in the crock pot making sure it hangs over the sides so that you can just lift the meatloaf right out when it is done cooking.

I like that it’s dairy-free, and gluten-free if you can trust your oatmeal.

It can be made in a variety of ways I am sure to make it even healthier or to suit dietary needs. So versatile.

Sounds delicious. I haven’t had meatloaf in forever. My mom used to make it a lot. I’ll have to keep the crockpot option in mind. I like to use it in the colder months. I hope your move went well. If I get a chance I’ll go through your posts and see what I can learn.

Thanks, Christine! Hope you are well! We are closing on the house in NC on the 20th and will be moving in then. We had about a month between the sale of the house in IA and the close in NC so I have been chilling out in Alabama in the house we have rented down here. Well, not chilling. It was 102 today. Woo boy. Life is good though and it will be wonderful to be settled. in. Maybe in a couple of years, right? I have a feeling there will be a lot of boxes for awhile.

I didn’t realize you were going to land in NC. That should be nice. Great place to retire, I think.

We have always wanted to land back in NC someplace and since Chris’s job is such now that he just needs to be close to an airport for the travel this is going to work out great. We are in the mountains and it is beautiful with so much to do and see. Can’t wait to share it all! 🙂 Great to reconnect with you, Christine. I hope you are well.
