Grandma Bonnie’s Broccoli Corn Bake

Sometimes I like to switch it up a little bit and use a recipe that is a little bit different for a side dish.  I found this recipe for Broccoli Corn Bake in my Grandma Bonnie’s steno pad.  Remember way back when I posted about having a couple of her recipe steno pads?  You can read about it here.

This very simple recipe is a winner. The sweetness of the corn makes it a great accompaniment to any meal and I never would have thought of putting corn and broccoli together but my grandma hit upon something great with this one.

Ingredients
Casserole
  • 1 16 oz can cream style corn
  • 1 10 oz package frozen chopped broccoli cooked and drained
  • 1 egg beaten
  • 1/2 cup cracker crumbs (I used Saltines but think Ritz would be perfect)
  • 1 TBSP instant minced onions
  • 2 TBSP melter butter
  • 1/2 tsp salt
  • dash pepper
Topping
  • 1/4 cup coarse cracker crumbs
  • 1 TBSP melted butter
Servings: servings
Instructions
  1. Combine corn, broccoli, egg and 1/2 cup cracker crumbs, onion, 2 TBSP melted butter and salt and pepper.
  2. Put into 1 quart casserole dish. Combine the 1/4 cup cracker crumbs and 1 TBSP melted butter.
  3. Spring on top of broccoli and corn mixture. Bake uncovered in 350 degree oven for 40 minutes.

    I just made scalloped corn last night for supper. I like this version, except then Randy wouldn’t eat it. Broccoli? Not going in that man’s mouth.

      Randy does not know what he is missing. Seriously. I am so glad Chris eats tons of different things and isn’t one bit picky so I can test things out on him. :-0

    Had to see what *your* “Grandma Bonnie” does! My blogging buddy’s screen name is Grandma Bonnie Peters (first name, Grandma); she is a grandmother (not mine), and if she cooked broccoli and corn together she’d probably steam them with dashes of soy sauce, or Braggs Liquid Aminos, and/or lemon…naturally gluten-free 🙂

      Glad you stopped by to check out my sweet Grandma Bonnie’s recipe today. I am going to try to work in a few more of her recipes from her steno pads in the next year. It is such fun to see what she was baking and cooking. Your Grandma’s recipe sounds pretty wonderful as well. 🙂
